Ingredients
- 1/2 cup mayonnaise
- 1/2 cup gluten-free barbecue sauce
- 1/2 teaspoon chipotle powder
- 2 large sweet onions
- 1/2 cup honey, slightly warmed
- 1/4 cup hot sauce
- 3 tbsp gluten-free soy sauce
- 20 slices Jones Dairy Farm Dry Aged Bacon
- fresh chopped cilantro, for garnish
Instructions
- Mix mayonnaise, barbecue sauce, and chipotle powder in a small bowl until smooth. Refrigerate until ready to serve.
- Peel onions and slice into 1/2-inch thick rings. Separate the rings, keeping two layers together for each ring to maintain structure. Use the larger rings and set the smaller ones aside for another use.
- Microwave onion rings on high for 30 seconds, then allow to cool.
- In a medium bowl, combine honey, hot sauce, and gluten-free soy sauce to make the glaze. Reserve 1/4 cup of the glaze in a separate bowl for brushing after baking.
- Preheat the oven to 300 degrees Fahrenheit and line a large baking sheet with parchment paper.
- Wrap each double onion ring with about 2 slices of Jones Dairy Farm Dry Aged Bacon, tucking the ends under or securing with a toothpick if needed.
- Dip each wrapped ring into the glaze and place on the prepared baking sheet.
