Beet & Flax Hummus

Ingredients

Hummus:

  • 2 small cooked beets
  • 1 (15 oz) can garbanzo beans, drained and rinsed
  • 2 cloves garlic
  • 1/2 lemon, juiced
  • 1/4 cup flaxseed oil
  • 1 1/2 teaspoons beetroot powder (optional)
  • salt and pepper, to taste

To serve:

Instructions

  1. Add beets, garbanzo beans, garlic, lemon juice, beet powder, salt, and pepper to a food processor. Blend until mostly smooth. With the motor running, slowly drizzle in flaxseed oil until creamy.
  2. Spoon into a bowl and top with crushed pistachios and a dollop of coconut yogurt. Serve with Nairn’s Oat Crackers.
