Ingredients
Hummus:
- 2 small cooked beets
- 1 (15 oz) can garbanzo beans, drained and rinsed
- 2 cloves garlic
- 1/2 lemon, juiced
- 1/4 cup flaxseed oil
- 1 1/2 teaspoons beetroot powder (optional)
- salt and pepper, to taste
To serve:

- Add beets, garbanzo beans, garlic, lemon juice, beet powder, salt, and pepper to a food processor. Blend until mostly smooth. With the motor running, slowly drizzle in flaxseed oil until creamy.
- Spoon into a bowl and top with crushed pistachios and a dollop of coconut yogurt. Serve with Nairn’s Oat Crackers.
