Ingredients

- 1 bell pepper, cut into chunks
- 1 zucchini, sliced
- 1 red onion, cut into chunks
- 1 tablespoon olive oil
- 2 tablespoons chopped cilantro

Instructions
- Preheat oven to 400 degrees Fahrenheit or heat a grill pan.
- Toss vegetables with olive oil.
