Ingredients
- 3 tablespoons vegetable oil
- 1 bay leaf
- 1 1/2 cups onions, finely chopped
- 2 green chilies, sliced
- 2 teaspoons ginger garlic paste
- 2 tablespoons cilantro, chopped
- 1 teaspoon salt
- 2 tablespoons chana masala spice mix
- 1/2 teaspoon sugar
- 5 tomatoes, pureed
- 500 milliliters water
- 2 cans chickpeas, drained
Instructions
- Heat the vegetable oil in a large saucepan over medium heat. Add the bay leaf and sauté for a few seconds.
- Add the finely chopped onions and cook until they are golden brown.
- Stir in the green chilies, ginger garlic paste, and chopped cilantro. Sauté for about 2 minutes.
- Add the chana masala spice mix, salt, and sugar. Stir to combine and cook for another 30 seconds.
- Pour in the pureed tomatoes and mix well. Add the water and bring to a boil.
- Add the drained chickpeas and stir. Reduce the heat and simmer for 20 to 30 minutes, allowing the flavors to develop and the sauce to thicken.
- Optional: Adjust salt and water to desired consistency before serving.
