Chana Masala

Ingredients

  • 3 tablespoons vegetable oil
  • 1 bay leaf
  • 1 1/2 cups onions, finely chopped
  • 2 green chilies, sliced
  • 2 teaspoons ginger garlic paste
  • 2 tablespoons cilantro, chopped
  • 1 teaspoon salt
  • 2 tablespoons chana masala spice mix
  • 1/2 teaspoon sugar
  • 5 tomatoes, pureed
  • 500 milliliters water
  • 2 cans chickpeas, drained

Instructions

  1. Heat the vegetable oil in a large saucepan over medium heat. Add the bay leaf and sauté for a few seconds.
  2. Add the finely chopped onions and cook until they are golden brown.
  3. Stir in the green chilies, ginger garlic paste, and chopped cilantro. Sauté for about 2 minutes.
  4. Add the chana masala spice mix, salt, and sugar. Stir to combine and cook for another 30 seconds.
  5. Pour in the pureed tomatoes and mix well. Add the water and bring to a boil.
  6. Add the drained chickpeas and stir. Reduce the heat and simmer for 20 to 30 minutes, allowing the flavors to develop and the sauce to thicken.
  7. Optional: Adjust salt and water to desired consistency before serving.
