Ingredients
- 1 Cafe Spice Channa Masala meal
- 2 cups cauliflower rice
- 1/2 cup diced cucumber
- 1/2 cup shredded carrots
- 1 tablespoon olive oil
- 2 tablespoons cilantro
- 1 tablespoon lemon juice
Instructions
- Heat olive oil in a skillet and sauté cauliflower rice for 5-6 minutes until tender.
- Heat the Channa Masala according to package instructions.
- Divide cauliflower rice into bowls.
- Spoon the chickpea curry on top.
- Add cucumber, carrots, cilantro, and lemon juice.
