Channa Masala Cauliflower Rice Bowls

Ingredients

  • 1 Cafe Spice Channa Masala meal
  • 2 cups cauliflower rice
  • 1/2 cup diced cucumber
  • 1/2 cup shredded carrots
  • 1 tablespoon olive oil
  • 2 tablespoons cilantro
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a skillet and sauté cauliflower rice for 5-6 minutes until tender.
  2. Heat the Channa Masala according to package instructions.
  3. Divide cauliflower rice into bowls.
  4. Spoon the chickpea curry on top.
  5. Add cucumber, carrots, cilantro, and lemon juice.
