Chicken Tikka Masala Stuffed Sweet Potatoes

Ingredients

  • 1 Cafe Spice Chicken Tikka Masala Meal
  • 2 medium sweet potatoes
  • 2 tablespoons plan Greek yogurt or dairy-free yogurt
  • 2 tablespoons chopped cilantro
  • 1 tablespoon olive oil
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Rub sweet potatoes with olive oil and pierce with a fork.
  3. Roast for 40-45 minutes until tender.
  4. Heat the Chicken Tikka Masala according to package instructions.
  5. Slice open the potatoes and fluff the interior.
  6. Spoon the tikka masala over the top and garnish with yogurt and cilantro.
