Ingredients
- 8 eggs
- 1 cup cottage cheese
- 6 slices Jones Canadian Bacon, diced
- 1 red bell pepper, diced
- 1 cup spinach, chopped
- salt & pepper
Instructions
- Heat oven to 350 degrees Fahrenheit. Mix eggs and cottage cheese in blender until smooth and creamy. Season with salt and pepper. Evenly divide between 12-cup muffin tin. Add Canadian Bacon, red bell pepper, and spinach.
- Bake for 25 minutes or until golden brown. Store in a container in the fridge to enjoy throughout the week.
