Creamy Avocado Hummus

Ingredients

  • 1 package (4 ounces) Crunchmaster® Multi-Seed Original Crackers
  • 1 can (14 ounces) chickpeas, drained and rinsed
  • 1/3 cup lemon juice
  • 2 cloves garlic
  • 1 ripe avocado halved, pitted and peeled
  • 2 tablespoons finely chopped fresh cilantro
  • 2 tablespoons olive oil
  • 3 tablespoons sesame paste
  • 1/2 teaspoons ground cumin
  • 1/2 teaspoons each salt and pepper
  • 4 teaspoons sesame seeds, toasted

Instructions

  1. In a food processor, mix together chickpeas, lemon juice, garlic, olive oil, sesame paste, cumin, salt and pepper until smooth. Add avocado; pulse until smooth (if too thick, add up to 2 tbsp water).
  2. Transfer to serving bowl. Sprinkle with cilantro and sesame seeds. Serve with crackers for dipping.
  3. Tips: Substitute lime juice for lemon juice. Spice up the hummus with a pinch of cayenne pepper or 1 finely chopped canned chipotle chili.
