Ingredients
- 2 tablespoons butter
- 2 cups fresh green peas, shelled
- 2 cups packed fresh spinach leaves, washed and chopped, or ¾ cup frozen chopped spinach, thawed
- 1 tablespoon chopped mint leaves
- 2½ cups water or vegetable stock
- 1 cup cream
- salt and pepper, to taste
- ¼ teaspoon sugar
- ¼ teaspoon nutmeg powder
- ¼ teaspoon garam masala powder
- juice of ½ lime
Instructions
- In a large saucepan, melt 2 tablespoons of butter over medium heat.
- Add the green peas, spinach, and mint leaves. Sauté for about 30 seconds.
- Pour in 2½ cups of water or vegetable stock and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 25 to 30 minutes until the peas are tender. Remove from heat and let the mixture cool slightly.
- Using a tabletop or hand blender, puree the soup until smooth.
- Strain the soup through a fine mesh sieve for a silky texture, if desired.
- Return the strained soup to the saucepan over medium heat.
- Stir in the cream, salt and black pepper to taste, ¼ teaspoon sugar, ¼ teaspoon nutmeg powder, and ¼ teaspoon garam masala powder.
- Bring the soup to a gentle boil, then simmer for 2 minutes.
- Remove from heat and stir in the juice of ½ lime. Serve hot.
