Green Pea Soup

Ingredients

  • 2 tablespoons butter
  • 2 cups fresh green peas, shelled
  • 2 cups packed fresh spinach leaves, washed and chopped, or ¾ cup frozen chopped spinach, thawed
  • 1 tablespoon chopped mint leaves
  • 2½ cups water or vegetable stock
  • 1 cup cream
  • salt and pepper, to taste
  • ¼ teaspoon sugar
  • ¼ teaspoon nutmeg powder
  • ¼ teaspoon garam masala powder
  • juice of ½ lime

Instructions

  1. In a large saucepan, melt 2 tablespoons of butter over medium heat.
  2. Add the green peas, spinach, and mint leaves. Sauté for about 30 seconds.
  3. Pour in 2½ cups of water or vegetable stock and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 25 to 30 minutes until the peas are tender. Remove from heat and let the mixture cool slightly.
  4. Using a tabletop or hand blender, puree the soup until smooth.
  5. Strain the soup through a fine mesh sieve for a silky texture, if desired.
  6. Return the strained soup to the saucepan over medium heat.
  7. Stir in the cream, salt and black pepper to taste, ¼ teaspoon sugar, ¼ teaspoon nutmeg powder, and ¼ teaspoon garam masala powder.
  8. Bring the soup to a gentle boil, then simmer for 2 minutes.
  9. Remove from heat and stir in the juice of ½ lime. Serve hot.
