Mediterranean Baked Cod with Lemon, Garlic & Asparagus

Ingredients

  • 4 cod fillets
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 zucchini, sliced into half-moons
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 3 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon each salt and pepper
  • 1 lemon, sliced (plus extra wedges for serving)

Instructions

  1. Preheat oven to 425 degrees Fahrenheit. Line a sheet pan with foil and set aside.
  2. Place asparagus, zucchini, onion, and tomatoes on prepared sheet pan. Toss with olive oil, garlic, oregano, paprika, salt, and pepper.
  3. Roast for 10–12 minutes to soften vegetables.
  4. Remove pan from oven and nestle cod fillets among vegetables and top each with lemon slices.
  5. Roast an additional 10–12 minutes, until cod flakes easily. Garnish with parsley and serve with lemon wedges.
