These healthy peanut butter and chocolate energy ballers deliver a mixture of simple and complex carbohydrates to help fuel you up whenever you need a little boost.

  • Yield: 18 servings

Ingredients

  • 2 cups gluten-free rolled oats
  • 2 tablespoons chia seeds
  • 1 cup natural peanut butter or other nut butter
  • 1/2 cup honey
  • 1/4 cup mini chocolate chips
  • 1/4 cup unsweetened shredded coconut

Instructions

  1. Combine oats, chia seeds, peanut butter (or other nut butter), honey, chocolate chips and coconut in a medium bowl and stir well.
  2. Using a 1 tablespoon measure, scoop and roll the mixture into balls.
  3. Store them in an airtight container for up to five days in the refrigerator or up to three months in the freezer.
