Apple Crumb Muffins

  • 1 package Muffin Mix
  • 1/3 cup unsweetened apple sauce
  • 1/3 cup cashew yogurt
  • 2 tbsp Vegetable Oil
  • 2 Eggs
  • 1/2 cup Almond Milk
  • 1 tsp Cinnamon
  • 1 Apple peeled and cubed
  • Topping
  • 1/4 cup gluten free oat flour
  • 2 tbsp Oats
  • 3 tbsp Brown Sugar
  • 1 tsp Cinnamon
  • 3 tbsp Vegetable Oil


  1. In a small bowl, combine oat flour, oats, brown sugar and cinnamon. Stir to combine
  2. Add in vegetable oil and stir to create an evenly moist mixture
  3. While preparing the muffin batter, place bowl in the freezer
  4. In a large bowl, add yogurt, applesauce, vegetable oil, eggs and almond milk. Wisk to combine
  5. Add in Caremoli Muffin Mix and cinnamon and mix just until combined
  6. Fold in cubed apples
  7. Preheat oven to 400 degrees
  8. In either a standard 12 muffin pan or a jumbo 6 muffin pan, add muffin liners
  9. Portion mixture evenly and top with oat mixture
  10. Place muffin tray in oven, immediately turning down to 350 degrees. Bake 25 minutes
