Everyone loves the person who walks into the party with a plate of brownies. Everyone loves that person even more when those brownies are packed with cauliflower. Yup. You read that right. Prepare to amaze everyone at the party when you tell them that these ooey gooey, paleo brownie delights are chocked with cauliflower and loaded with vitamin C. When’s the last time you were able to say that about a dessert (that actually tastes good)?!

Ingredients
- 1 cup Cauliflower-Based Baking Mix (Paleo)
- 1 cup coconut or palm sugar
- 1/2 cup melted and cooled coconut oil
- 1/4 tsp Salt
- 1 tsp Vanilla Extract
- 3/4 cup Cocoa Powder
- 3 large eggs
- 1/2 cup paleo-friendly chocolate chips
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat oven to 350°F.
- Grease 8x8-inch pan; set aside.
- Add coconut oil, coconut or palm sugar, salt and vanilla extract to a large bowl and mix until evenly blended.
- Add cocoa powder and mix well.
- Add eggs, one at a time, blending well after each addition.
- Add cauliflower-based baking mix (Paleo), chocolate chips and nuts (if using) and mix until evenly blended.
- Pour batter into prepared pan and bake for 30-35 minutes or until sides start to pull away from pan.
- Remove from oven and cool completely in pan on wire rack. Cut into squares. Store in tightly covered container at room temperature.
