Buffalo Chickpea Salad Sandwich

Ingredients
- 1 can chickpeas, drained and rinsed
- 1/2 medium carrot, shredded
- 1/2 half stalk celery, finely chopped
- 2 green onions, chopped
- 1/2 small red bell pepper, chopped
- 1/4 cup unsweetened plant-based yogurt
- 1 to 2 tbsp hot sauce, to taste
- 1/4 tsp Garlic Powder
- Salt and Pepper to taste
Instructions
- In a large bowl, mash chickpeas to form a coarse mixture.
- Add remaining ingredients and stir to combine. Adjust seasonings to taste.
- Serve on a gluten-free loaf or toasted Millet & Chia buns.
