Chewy Chocolate Chip Cookies with Cauliflower

Ingredients
- 1 cup (2 sticks) butter, softened
- 3/4 cup Granulated Sugar
- 3/4 cup firmly packed brown sugar
- 2 large eggs
- 1 tsp. Vanilla Extract
- 2 1/4 cup Cauliflower-Based Baking Mix
- 1/2 tsp. Salt
- 12 oz. semi-sweet chocolate morsels
- 1 cup chopped nuts optional
Instructions
- Preheat oven to 375°F.
- Beat butter and sugars in medium bowl on medium speed of mixer until creamy.
- Add eggs, one at a time, mixing well after each is added. Stir in vanilla. Beat in combined baking mix and salt until blended. Stir in chocolate morsels and nuts.
- Drop dough in rounded teaspoonfuls onto un-greased baking sheets.
- Bake 9 - 11 mins. or until golden brown and firm to the touch.
- Remove from oven and let rest on baking sheets for 2 mins. Carefully remove and place on wire racks to cool completely. Store in tightly covered container at room temperature for up to 7 days.
