Chickpea Greek Salad
Simple, filling and an awesome vegetarian option! (Plus it keeps great in the fridge)

Ingredients
- 2 cups Canned chickpeas drained and rinsed well
- 2 cups Schar penne cooked, tossed with olive oil, cooled
- 1 cup Cucumber finely chopped
- 1 cup tomato finely chopped
- 1 cup feta finely chopped
- 1/2 cup Onion or red onion very finely chopped
- 1/2 cup Parsley chopped
- 1 tbsp dried oregano
- 1/4 cup Red Wine Vinegar
- 1/3 cup olive oil
- Salt to taste
- Pepper to taste
- Kalamata olives optional
Instructions
- Cook Schär penne according to the package instructions. Toss with 1 tablespoon of olive oil and set aside to cool. Drain and rinse canned chickpeas, set aside.
- Finely chop cucumber, tomato, feta, onion, and parsley.
- Add all ingredients to a large bowl and toss with oregano, red wine vinegar and salt and pepper to taste.
