Chickpea Greek Salad

Simple, filling and an awesome vegetarian option! (Plus it keeps great in the fridge)

Ingredients

  • 2 cups Canned chickpeas drained and rinsed well
  • 2 cups Schar penne cooked, tossed with olive oil, cooled
  • 1 cup Cucumber finely chopped
  • 1 cup tomato finely chopped
  • 1 cup feta finely chopped
  • 1/2 cup Onion or red onion very finely chopped
  • 1/2 cup Parsley chopped
  • 1 tbsp dried oregano
  • 1/4 cup Red Wine Vinegar
  • 1/3 cup olive oil
  • Salt to taste
  • Pepper to taste
  • Kalamata olives optional

Instructions

  1. Cook Schär penne according to the package instructions. Toss with 1 tablespoon of olive oil and set aside to cool. Drain and rinse canned chickpeas, set aside.
  2. Finely chop cucumber, tomato, feta, onion, and parsley.
  3. Add all ingredients to a large bowl and toss with oregano, red wine vinegar and salt and pepper to taste.
