Gluten-Free Tacos

Ingredients

  • 2 bell peppers sliced
  • 1 onion sliced
  • 1/2 tsbp olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 lb ground meat of choice
  • 1 packet siete foods taco seasoning
  • 1/3 cup Water
  • 1 packet Guacamole spice mix
  • 2 Avocados
  • 1 package hard taco shells
  • Taco toppings of choice Examples include beans, cheese, sour cream, limes, tomato, cilantro, and onion!

Instructions

  1. Preheat oven to 325.
  2. Toss peppers and onions with olive oil salt and pepper. Spread out on parchment lined backing tray and put in oven for about 20-25 minutes until desired texture is reached. While peppers are cooking, cook meat in a skillet over medium high heat. When meat is mostly browned,
  3. Add seasoning and water and cook thoroughly. Leave over low heat to stay warm.
  4. Mash 2 avocados and mix with seasoning packet.
  5. Optional, can add some lime juice or other toppings into guacamole. Heat taco shells according to package directions. Build tacos in heated shells and add toppings of choice!
