Ingredients

  • 2 tbsp Butter
  • 2 cups (200g) fresh green peas shelled
  • 2 cups (100g) packed fresh spinach leaves, washed and chopped or 3/4th cup (150g) frozen chopped spinach thawed
  • 1 tbsp chopped mint leaves
  • 2 1/2 cups water or vegetable stock
  • 1 cup (200 ml) Cream
  • Salt to taste
  • Black pepper powder, to taste
  • 1/4 tsp Sugar
  • 1/4 tsp nutmeg powder
  • 1/4 tsp garam masala powder
  • Juice of ½ lime

Instructions

  1. Melt 1 teaspoon of butter in a large sauce pan over medium heat, add green peas, spinach, and mint; cook for 30 seconds. Add water and bring it to a boil and lower the heat and Simmer covered for 25 to 30 minutes. Remove from heat and let it cool. Using a table top or a hand blender, puree the mixture until very smooth. Pass it thru a strainer for a smooth texture.
  2. In a large sauce pot over medium heat melt the remaining butter; add strained pea soup, cream, salt, black pepper to taste, sugar, nutmeg and garam masala powder. Bring to a boil, simmer for 2 minutes and then remove from heat. Add lime juice before serving. Serve hot.
