Ingredients
- Crust
- 3 Cups Pamela's Artisan Flour Blend Gluten-Free Flour
- 1 1/2 Cups powdered sugar
- 1 1/2 Cups Butter or dairy-free alternative, melted
- Filling
- 6 Eggs
- 3 Cups Sugar
- 1 1/2 Teaspoons Baking Powder
- 1/2 Cup Pamela's Artisan Flour Blend Gluten-Free Flour
- 1/3 Cup lemon juice
- lemon zest from 2 lemons
Instructions
Crust
- Preheat oven to 350F.
- Mix together flour and powered sugar.
- Pour melted butter over the mixture and stir until crumbly.
- Press dough into greased 9 x 13 inch pan and bake for 15 minutes.
Filling
- Whisk eggs until fluffy.
- Add remaining ingredients.
- Pour filling over crust dough immediately after it comes out of the oven, and bake at 350F for another 45 minutes.
- Allow to cool completely before topping bars with powdered sugar.
- Cut and enjoy!
