Lentil Chili

Ingredients
- 2 tbsp olive oil
- 4 cloves garlic minced
- 1 Yellow Onion chopped
- 1 Red Onion chopped
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 tsp each chili powder, paprika, oregano, red pepper flakes, salt and pepper
- 1/4 tsp Cinnamon
- 1 can diced tomatoes
- 2 cups cooked lentils
- 1 can Black Beans with liquid
- Base of choice, prepared, I used gf rotini
- Favorite chili toppings
Instructions
- Cook lentils according to package directions. Meanwhile, Add olive oil and heat pan to medium high heat.
- Add vegetables and sauté until starting to soften, about 5 minutes. Add seasonings and continue to cook, stirring constantly.
- Add tomatoes, lentils, and black beans. If you don’t want to cook your lentils beforehand, you can add the package necessitated water or vegetable broth to the pan and cook according to package directions.
- Cover and cook for 10 minutes, then remove cover and cook for 10 minutes more.
- Add salt and pepper to taste. Serve over your choice of base - I used the gluten free rotini, but you could use rice, mashed potatoes, or veggies! Top with favorite chili toppings!
