Ingredients
- 3/4 Cup Pamela's Products Gluten-Free All-Purpose Flour
- 1/2 Teaspoon Baking Soda
- 1/2 Teaspoon Salt
- 1 Tablespoon Cinnamon
- 1/2 Cup Brown Sugar
- 1/4 Cup White Sugar
- 2 Tablespoons maple syrup
- 1/4 Cup Applesauce
- 1/4 Cup Coconut Oil
- 1/2 Teaspoon Vanilla
- 1 1/2 Cup Gluten-Free Oats rolled
- 1/2 Cup Raisins
Instructions
- Preheat oven to 350° F. Line two cookie sheets with Silpats or parchment paper.
- Mix together the flour, baking soda, salt, and cinnamon. Set aside.
- Mix both sugars, maple syrup, applesauce, oil, and vanilla together in a medium bowl.
- Add the flour mixture and stir until blended.
- Stir in the oats, followed by the raisins. Let sit for 10 minutes.
- Drop rounded tablespoonfuls onto the cookie sheets.
- Bake for 12-14 minutes.
- Let cool for about 5-8 minutes on cookie sheets, then carefully place on wire rack to cool.
