Paleo Cauliflower-Crusted Chicken Tenders

Ingredients
- 1 cup Cauliflower-Based Baking Mix (Paleo)
- 1 tbsp Paprika
- 1 tbsp Salt
- 1 tbsp black pepper
- 1/2 tbsp Garlic Powder
- 1 tbsp dried thyme
- 1 tsp Onion Powder
- 1/4 tsp dried oregano
- 1 Egg
- 1/4 cup unsweetened original almond milk
- 3 chicken strips (bone-in or boneless)
Instructions
- In a zip top plastic bag, combine Cauliflower-Based Baking mix, paprika, salt, pepper, garlic powder, dried thyme, onion powder, and dried oregano. Seal bag and shake well.
- In a shallow dish, beat eggs and almond milk.
- Dip chicken pieces into egg mixture, shake off excess, then place in the bag with coating. Seal and shake until coated.
- Put coated chicken on baking sheet and bake, uncovered, at 350°F for 30-60 minutes or until juices run clear (longer times for large pieces and bone in). The chicken is thoroughly cooked and safe to eat when a meat thermometer reads 165°F.
