Ricotta Cherry Mousse

  • 2 Cups Ricotta Cheese
  • 3 TBSP powdered sugar sifted
  • 1/4 tsp Almond Extract
  • 1 tsp Vanilla Extract
  • 2 Cups Dark Cherries pitted and sliced (or frozen if fresh are not available)
  • 1/2 Cup Semisweet Chocolate Chips ground coarse in a blender


  1. Put the ricotta in a medium size mixing bowl and mix it with an electric mixer at high speeds for about 3 minutes.
  2. Slowly add the sugar.
  3. Stir in the extract, cover, and chill.
  4. Fifteen minutes before serving, stir in the cherries.
