Summer Herb & Sausage Wild Rice, Fruit Stuffing

Ingredients
- 1 12 oz Jones Dairy Farm All Natural Pork Sausage Roll
- 2 cups cooked wild rice
- 2 stalks Celery diced
- 1/2 Yellow Onion yellow onion
- 1/2 cup red grapes red grapes
- 3/4 cup diced tart apple
- 1/2 cup diced pears
- 1/4 cup blueberry infused (or regular) dried cranberries
- 1/2 cup chopped pecans
- 1 tsp fresh sage minced
- 1/2 tsp celery seed or 1 ½ tablespoons minced celery leaves
- 1 tsp Salt
- 1 tsp Pepper
- 1/2 tsp dried thyme or 1 1/2 teaspoons fresh, minced
- 1 1/2 tsp fresh rosemary or 1/2 teaspoon dried
- 2 tsp fresh chives chopped
- 2 tbsp fresh parsley minced (rinse and squeeze dry in a paper towel until water runs clear)
Instructions
- Preheat oven to 425° F. Cook wild rice according to package instructions. While rice cooks, brown sausage in oven safe skillet over medium heat until cooked, breaking up as it cooks, about 8-10 minutes. Remove sausage from pan, set aside.
- Using same skillet, sauté celery and onion in remaining sausage drippings until tender, about 4-5 minutes. Sprinkle veggies with herbs and seasonings, stir to combine.
- Mix sausage, rice, and fruits into celery and onion mixture. Bake in skillet about 15 minutes, sprinkle pecans on top and bake an additional 5 minutes.
