Vegan Nicoise Salad With Gluten-Free Croutons

Ingredients
- 2 cups small new potatoes cooked and cooled
- 1 large handful green beans trimmed, blanched and cooled
- 1 cup radishes quartered
- 1/2 cup pitted Kalamata olives halved
- 1 cup Perfect croutons
- For the Dressing
- 1 tbsp minced shallot
- 1 tsp Dijon mustard
- 1 pinch dry thyme
- 2 tbsp Apple Cider Vinegar
- 2 to 3 tbsp olive oil
- 1 tsp maple syrup
- Salt and Pepper
Instructions
- Arrange all the salad ingredients on a large platter
- Mix the dressing in a small bowl until well combined. Adjust seasonings to taste.
- Pour over salad and serve immediately.
