Vegan Nicoise Salad With Gluten-Free Croutons

Ingredients

  • 2 cups small new potatoes cooked and cooled
  • 1 large handful green beans trimmed, blanched and cooled
  • 1 cup radishes quartered
  • 1/2 cup pitted Kalamata olives halved
  • 1 cup Perfect croutons
  • For the Dressing
  • 1 tbsp minced shallot
  • 1 tsp Dijon mustard
  • 1 pinch dry thyme
  • 2 tbsp Apple Cider Vinegar
  • 2 to 3 tbsp olive oil
  • 1 tsp maple syrup
  • Salt and Pepper

Instructions

  1. Arrange all the salad ingredients on a large platter
  2. Mix the dressing in a small bowl until well combined. Adjust seasonings to taste.
  3. Pour over salad and serve immediately.
