Very BERRY Dessert Pizza

Ingredients
- 1 Cauliflower Pizza Crusts
- 1 tbsp unsalted butter, melted
- 1 1/2 tbsp tbsp sugar
- 1/8 tsp Cinnamon
- 8 oz mascarpone, at room temperature
- 2 tbsp honey
- 1 tbsp lemon juice
- 1/4 tsp Vanilla Extract
- 2 cups mixed berries (strawberries, blueberries, blackberries, raspberries), rinsed and de-stemmed
- powdered sugar, for garnish
Instructions
- Preheat oven to 425 degrees. Remove CAULIPOWER Cauliflower Crust from freezer and brush with melted butter.
- Combine cinnamon and sugar in a small bowl, stirring until well mixed. Sprinkle mixture across crust. Place CAULIPOWER Cauliflower Crust directly on the middle rack of the oven, and bake for 12-15 minutes, or until the crust is fully cooked and golden brown.
- Meanwhile, combine mascarpone, honey, lemon juice and vanilla extract in a medium bowl. Mix until creamy.
- Remove pizza from oven and let cool.
- Spread mascarpone mixture across crust. Top with fresh mixed berries, and dust with powdered sugar to taste!
