Whipped Herb Yogurt With Meatballs

Ingredients
- Meatballs
- 1/2 lb lean ground beef 9/10 works well
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1/4 tsp Onion Powder
- 1/4 tsp Garlic Powder
- 1/4 cup Gluten-Free Breadcrumbs Optional
- 1/4 cup Shredded Parmesan Optional
- Whipped Yogurt
- 1 cup Greek Yogurt Full fat preferred
- 1 tbsp chopped fresh parsley
- 1/2 tsp Red Pepper Flakes
- 1/2 onion minced
- 1 clove garlic, minced
- 1 tsp lemon juice
- Salt, Pepper to taste
- olive oil For drizzling
Instructions
For the Meatballs
- Mix all ingredients by hand. Roll into 10 balls, and bake at 375 degrees for about 15-20 minutes or until fully cooked through.
For the Yogurt
- While the meatballs are cooking prep the yogurt. First sauté onion and garlic in olive oil until soft. Add optional salt and pepper. Add Greek yogurt to a bowl and whisk in parsley, red pepper flakes, and 1 teaspoon lemon juice. Once cooled add in onion powder and garlic powder. Mix until well combined and add salt and pepper to taste.
To serve
- Divide the yogurt in half and spread in a shallow bowl. Top with meatballs and a drizzle of olive oil. Optional: Gluten-free bread on the side!
