Whipped Herb Yogurt With Meatballs

Ingredients

  • Meatballs
  • 1/2 lb lean ground beef 9/10 works well
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/4 cup Gluten-Free Breadcrumbs Optional
  • 1/4 cup Shredded Parmesan Optional
  • Whipped Yogurt
  • 1 cup Greek Yogurt Full fat preferred
  • 1 tbsp chopped fresh parsley
  • 1/2 tsp Red Pepper Flakes
  • 1/2 onion minced
  • 1 clove garlic, minced
  • 1 tsp lemon juice
  • Salt, Pepper to taste
  • olive oil For drizzling

Instructions

For the Meatballs
  1. Mix all ingredients by hand. Roll into 10 balls, and bake at 375 degrees for about 15-20 minutes or until fully cooked through.
For the Yogurt
  1. While the meatballs are cooking prep the yogurt. First sauté onion and garlic in olive oil until soft. Add optional salt and pepper. Add Greek yogurt to a bowl and whisk in parsley, red pepper flakes, and 1 teaspoon lemon juice. Once cooled add in onion powder and garlic powder. Mix until well combined and add salt and pepper to taste.
To serve
  1. Divide the yogurt in half and spread in a shallow bowl. Top with meatballs and a drizzle of olive oil. Optional: Gluten-free bread on the side!
