Vegetable Korma Stuffed Portobello Mushrooms

Ingredients

  • 1 Cafe Spice Vegetable Korma meal
  • 4 large portobello mushrooms
  • 1/2 cup shredded mozzarella, optional
  • 1 tablespoon olive oil
  • 1 tablespoons chopped cilantro
  • salt and pepper

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Remove stems from mushrooms and brush with olive oil.
  3. Place on a baking sheet and roast 10 minutes.
  4. Heat Vegetable Korma according to package instructions.
  5. Spoon korma into mushroom caps.
  6. Top with cheese if desired and bake 10 minutes.
  7. Garnish with cilantro before serving.
