Ingredients

  • 3 garlic cloves, minced
  • 2 tablespoons parmesan cheese, finely grated
  • 1 tablespoon flat Italian parsley leaves, minced
  • ¼ cup + 2 tablespoons olive oil, divided
  • 1 CAULIPOWER Cauliflower Crust
  • 1 cup frozen peas, defrosted
  • 1/3 cup lemon juice
  • 1 tablespoon preserved lemon paste
  • 2 tablespoons tahini paste
  • ¼ cup mint leaves
  • ¼ cup cilantro leaves and stems
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit. Line a baking sheet with foil and set aside.
  2. In a small bowl, mix together garlic, parmesan, parsley, 1/4 cup olive oil, salt, and pepper.
  3. Carefully slice CAULIPOWER Cauliflower Crust into 12 equal triangles and place on a parchment lined baking sheet. Brush the garlic parmesan herb oil on each triangle, front and back.
  4. Place crust pieces on prepared baking sheet and bake for 7-8 minutes, flipping halfway, until golden brown and crispy.
  5. While the dippers bake, make the dip. In a food processor or blender, blend together frozen peas, lemon juice, lemon paste, tahini paste, remaining 2 tablespoons olive oil, mint, cilantro, salt, and pepper until smooth.
  6. Serve dippers with crudité and dip!
