Bacon Wrapped Onion Rings with Sriracha Honey Glaze

Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup gluten-free barbecue sauce
  • 1/2 teaspoon chipotle powder
  • 2 large sweet onions
  • 1/2 cup honey, slightly warmed
  • 1/4 cup hot sauce
  • 3 tbsp gluten-free soy sauce
  • 20 slices Jones Dairy Farm Dry Aged Bacon
  • fresh chopped cilantro, for garnish

Instructions

  1. Mix mayonnaise, barbecue sauce, and chipotle powder in a small bowl until smooth. Refrigerate until ready to serve.
  2. Peel onions and slice into 1/2-inch thick rings. Separate the rings, keeping two layers together for each ring to maintain structure. Use the larger rings and set the smaller ones aside for another use.
  3. Microwave onion rings on high for 30 seconds, then allow to cool.
  4. In a medium bowl, combine honey, hot sauce, and gluten-free soy sauce to make the glaze. Reserve 1/4 cup of the glaze in a separate bowl for brushing after baking.
  5. Preheat the oven to 300 degrees Fahrenheit and line a large baking sheet with parchment paper.
  6. Wrap each double onion ring with about 2 slices of Jones Dairy Farm Dry Aged Bacon, tucking the ends under or securing with a toothpick if needed.
  7. Dip each wrapped ring into the glaze and place on the prepared baking sheet.
  8. Bake for 35 minutes, then flip the rings and bake for another 25 minutes, or until the bacon is crispy and browned. Watch closely toward the end to prevent overcooking.
