Ingredients
For the Lemon-Herb Dressing
- 3 tablespoons extra virgin olive oil
- juice and zest of 1 lemon
- 1 garlic glove, grated
- 1/2 teaspoon dried oregano
- salt and pepper to taste
For the Bowl
- 2 cups cooked quinoa
- 1 can white beans (cannellini or Great Northern), drained and rinsed
- 1 small cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely minced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh mint, optional
Instructions
- In a glass bowl, whisk together dressing ingredients.
- In a large bowl, combine the quinoa, white beans, cucumber, tomatoes, onion, and herbs. Drizzle with dressing and toss to combine.
- Taste and adjust seasoning. Finish with extra herbs and olive oil, if desired.
