Ingredients

For the Lemon-Herb Dressing

  • 3 tablespoons extra virgin olive oil
  • juice and zest of 1 lemon
  • 1 garlic glove, grated
  • 1/2 teaspoon dried oregano
  • salt and pepper to taste

For the Bowl

  • 2 cups cooked quinoa
  • 1 can white beans (cannellini or Great Northern), drained and rinsed
  • 1 small cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, optional

Instructions

  1. In a glass bowl, whisk together dressing ingredients.
  2. In a large bowl, combine the quinoa, white beans, cucumber, tomatoes, onion, and herbs. Drizzle with dressing and toss to combine.
