Avocado Tuna Salad & Crackers

This tuna salad is packed full of healthy fats to support your child’s developing brain. Pairing with crackers in a separate container means no soggy sandwich!

Ingredients

  • 4 (5-6 oz) cans solid white albacore tuna in water, drained
  • 3 Avocados
  • 1 cup Cucumber diced
  • 4 tbsp Red Onion finely chopped (optional for kids)
  • 2 Green Onion sliced (optional for kids)
  • 2 stalk Celery chopped
  • 2 tsp garlic salt
  • 2/3 cup fresh cilantro chopped, packed (optional for kids)
  • 1 Lime juiced (or more if desired)
  • Salt
  • black pepper fresh, ground
  • Crunchmaster Multi-Seed Crackers
  • 2 Apple medium-sized

Instructions

  1. Flake the drained tuna with a fork in a medium bowl.
  2. Add avocado to the tuna and mash with a fork, breaking up any large chunks.
  3. Add cucumber, celery, red onion, cilantro, green onion, and garlic salt.
  4. Stir together and add lime juice, mixing to combine.
  5. Season with salt and fresh black pepper to taste.
  6. Keep in the fridge up to three days.
  7. Serve chilled with an ice pack in your child’s lunch box with 25 Crunchmaster crackers for dipping and apple slices on the side.
