Buffalo Cauliflower Bites

  • 1 Cup Cream of Rice Cereal uncooked
  • 1 Cup Water
  • 1 Teaspoon Salt
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Paprika
  • 1 Large Head Cauliflower cut into small florets
  • 1/2 Cup Hot Sauce
  • 3 Tablespoons Butter melted
  • Celery Sticks
  • gluten-free Cheddar Cheese Nut Thins


  1. Preheat oven to 450°F. Lightly grease large baking sheet.
  2. Combine Cream of Rice, water, salt, garlic powder and paprika in large bowl and stir until smooth.
  3. Add cauliflower and stir gently until florets are evenly coated with batter.
  4. Arrange cauliflower in a single layer on baking sheet.
  5. Bake 20 minutes or until golden.
  6. Combine cayenne pepper sauce and melted butter and pour evenly over cauliflower. Toss gently until cauliflower is evenly coated.
  7. Bake 10 minutes or until cauliflower begins to crisp, rearranging florets occasionally if needed.
  8. Serve with celery and blue cheese dressing.
