Cottage Cheese Canadian Bacon Egg Cups

Ingredients
- 8 Eggs
- 1 cup Cottage Cheese
- 6 slices Jones Canadian Bacon diced
- 1 Red Bell Pepper diced
- 1 cup Spinach chopped
- Salt & Pepper to taste
Instructions
- Heat oven to 350° F. Mix eggs and cottage cheese in blender until smooth and creamy. Season with salt and pepper. Evenly divide between 12-cup muffin tin. Add Canadian Bacon, red bell pepper, and spinach.
- Bake for 25 minutes or until golden brown. Store in a container in the fridge to enjoy throughout the week.
