Cottage Cheese Canadian Bacon Egg Cups

Ingredients

  • 8 Eggs
  • 1 cup Cottage Cheese
  • 6 slices Jones Canadian Bacon diced
  • 1 Red Bell Pepper diced
  • 1 cup Spinach chopped
  • Salt & Pepper to taste

Instructions

  1. Heat oven to 350° F. Mix eggs and cottage cheese in blender until smooth and creamy. Season with salt and pepper. Evenly divide between 12-cup muffin tin. Add Canadian Bacon, red bell pepper, and spinach.
  2. Bake for 25 minutes or until golden brown. Store in a container in the fridge to enjoy throughout the week.
