Easy Chicken Tender Enchiladas

Ingredients
- 1 bag All Natural Chicken Tenders
- 8 gluten-free tortillas
- 1 can enchilada sauce
- 1 cup Shredded Cheese
- 1 Lime to juice on top
- 3/4 cup sour cream or Greek yogurt, to top
- 1 cup pico de gallo, to top
- 1 Sliced avocado to top
- cilantro, for garnish
Instructions
- Remove CAULIPOWER Chicken Tenders from freezer and cook according to package instructions.
- Layer gluten-free tortillas with refried beans and CAULIPOWER Chicken Tenders. Roll up and repeat for all 8 tortillas.
- Spread thin layer of enchilada sauce on the bottom of a baking dish, and place enchiladas on top.
- Pour remaining enchilada sauce on top of enchiladas and sprinkle cheese on top. Bake in oven until cheese is melted and browned.
- Remove from oven, top with sour cream or Greek yogurt, pico de gallo, lime juice, and sliced avocado. Garnish with cilantro and enjoy!
