Kale, Bacon, and Parmesan Salad

  • Dressing
  • 1/2 Cup mayonnaise or aioli
  • 1/2 Cup Parmesan cheese finely grated
  • 1/4 Cup lemon juice
  • 1/4 Cup Garlic Infused Olive Oil
  • 1 Tablespoon Dijon mustard
  • 1 Tablespoon Gluten-Free Worcestershire Sauce
  • kosher salt
  • black pepper grated
  • Salad
  • 3 Ounces Kale chopped
  • 2 Slices Jones Dairy Farm Dry Aged Bacon cooked, drained, and cut into small pieces
  • 1 Tablespoon Parmesan cheese shaved


  1. Emulsify all ingredients together using a blender or food processor; adjust seasoning.
  2. Cover and refrigerate. Dressing recipe makes enough for multiple salads.
  1. In a medium bowl, toss kale and bacon with 1/4 to 1/3 cup dressing.
  2. Plate and top with additional cheese and freshly ground pepper.
