Mediterranean Quinoa Salad

Ingredients

  • 1/2 Cup Living Now Quinoa uncooked
  • 10 Ounces Asparagus fresh
  • 6 Tablespoons Sun Dried Tomatoes
  • 1/2 Cup Feta Cheese crumbled
  • 2 Ounces Chicken Breast roasted
  • 1 Tablespoon olive oil
  • Salt and Pepper to taste

Instructions

  1. Rinse and cook quinoa as directed on package.
  2. Microwave asparagus as directed on package about 2 minutes.
  3. Cut into 1” pieces.
  4. Transfer cooked quinoa into large bowl.
  5. Add asparagus, tomatoes, feta and chicken breast.
  6. Toss with oil; sprinkle with salt and pepper.
