Ingredients
- 4 Large Cloves garlic pressed
- 4 Teaspoons Rosemary fresh, chopped
- 1 1/2 Teaspoons Salt coarse
- 1/2 Teaspoon black pepper ground
- 2 1/2 Pound Pork Loin Roast boneless, well-trimmed
- Fresh Rosemary Sprigs
- Mary's Gone Crackers Herb Crackers for garnish
Instructions
- Preheat oven to 400°.
- Line 13 x 9 x 2 roasting pan with foil.
- Mix first 4 ingredients in bowl.
- Rub garlic mixture over pork. Place pork, fat side down, in prepared roasting pan; cook 30 minutes.
- Turn roast fat side up; continue cooking until thermometer inserted into center of meat registers 155°, about 25 minutes. Remove from oven; let stand 10 minutes.
- Drain juices from roasting pan into small saucepan; set over low heat to keep warm.
- Cut pork crosswise into 1/3 inch thick slices; arrange on platter.
- Pour pan juices over meat; garnish with rosemary sprigs, if desired.
