Pork Loin with Garlic and Rosemary

Ingredients

  • 4 Large Cloves garlic pressed
  • 4 Teaspoons Rosemary fresh, chopped
  • 1 1/2 Teaspoons Salt coarse
  • 1/2 Teaspoon black pepper ground
  • 2 1/2 Pound Pork Loin Roast boneless, well-trimmed
  • Fresh Rosemary Sprigs
  • Mary's Gone Crackers Herb Crackers for garnish

Instructions

  1. Preheat oven to 400°.
  2. Line 13 x 9 x 2 roasting pan with foil.
  3. Mix first 4 ingredients in bowl.
  4. Rub garlic mixture over pork. Place pork, fat side down, in prepared roasting pan; cook 30 minutes.
  5. Turn roast fat side up; continue cooking until thermometer inserted into center of meat registers 155°, about 25 minutes. Remove from oven; let stand 10 minutes.
  6. Drain juices from roasting pan into small saucepan; set over low heat to keep warm.
  7. Cut pork crosswise into 1/3 inch thick slices; arrange on platter.
  8. Pour pan juices over meat; garnish with rosemary sprigs, if desired.
