Ingredients
- 1 Package Gluten-Free Pie Crust
- 1 Cup Pumpkin Puree
- 1/4 Cup Brown Sugar
- 1 Tablespoon maple syrup
- 1 Teaspoon Pumpkin Pie Spice
Instructions
- Preheat oven to 375F.
- Roll out the pie crust between two sheets of parchment paper to 1/4 inch thick.
- Use a round cookie cutter or the rim of a glass cup to cut 3″ rounds.
- To make the filling, combine the pumpkin puree, brown sugar, maple syrup and spice in a bowl.
- Spoon a tablespoon of the filling onto half of the pie dough rounds.
- Place a plain pie dough round on top of the filling and seal.
- Use a fork to crimp the edges.
- Bake for 20-222 minutes, or until edges are slightly golden brown.
- Cool on cooling rack.
