Pumpkin Hand Pies

  • 1 Package Gluten-Free Pie Crust
  • 1 Cup Pumpkin Puree
  • 1/4 Cup Brown Sugar
  • 1 Tablespoon maple syrup
  • 1 Teaspoon Pumpkin Pie Spice


  1. Preheat oven to 375F.
  2. Roll out the pie crust between two sheets of parchment paper to 1/4 inch thick.
  3. Use a round cookie cutter or the rim of a glass cup to cut 3″ rounds.
  4. To make the filling, combine the pumpkin puree, brown sugar, maple syrup and spice in a bowl.
  5. Spoon a tablespoon of the filling onto half of the pie dough rounds.
  6. Place a plain pie dough round on top of the filling and seal.
  7. Use a fork to crimp the edges.
  8. Bake for 20-222 minutes, or until edges are slightly golden brown.
  9. Cool on cooling rack.
