Smoked Salmon, Asparagus & Avocado Salad

Ingredients

  • 1 bunch fresh asparagus spears, cut into thirds
  • 8 Ounces prepackaged salad greens
  • 2 large ripe avocados, cut into bite-size pieces
  • 2 cans Crown Prince Natural Smoked Alaskan Coho Salmon, drained and flaked
  • 1 small red onion, finely sliced
  • 1 tablespoons chopped fresh flat leaf parsley
  • Salad Dressing
  • 2 garlic cloves, chopped
  • 1/2 cup Extra Virgin Olive Oil
  • 1/4 cup white wine vinegar
  • 1/4 tsp Sugar
  • 2 tsp. Mustard
  • 2 tbsp. lemon juice

Instructions

  1. Bring a pan of water to a boil and cook the asparagus for 4 minutes. Drain, rinse with cold water, and set aside to cool.
  2. To make dressing combine all ingredients into a small bowl and mix well. Set aside.
  3. Place salad greens into a large bowl. Add the remaining salad ingredients. Pour dressing over the salad and gently toss.
