Smoked Salmon, Asparagus & Avocado Salad

Ingredients
- 1 bunch fresh asparagus spears, cut into thirds
- 8 Ounces prepackaged salad greens
- 2 large ripe avocados, cut into bite-size pieces
- 2 cans Crown Prince Natural Smoked Alaskan Coho Salmon, drained and flaked
- 1 small red onion, finely sliced
- 1 tablespoons chopped fresh flat leaf parsley
- Salad Dressing
- 2 garlic cloves, chopped
- 1/2 cup Extra Virgin Olive Oil
- 1/4 cup white wine vinegar
- 1/4 tsp Sugar
- 2 tsp. Mustard
- 2 tbsp. lemon juice
Instructions
- Bring a pan of water to a boil and cook the asparagus for 4 minutes. Drain, rinse with cold water, and set aside to cool.
- To make dressing combine all ingredients into a small bowl and mix well. Set aside.
- Place salad greens into a large bowl. Add the remaining salad ingredients. Pour dressing over the salad and gently toss.
