Veg in the Morning Pancakes

Ingredients

  • 1 cup CAULIPOWER Cauliflower-Based Baking Mix (original)
  • 2 tbsp Sugar
  • 1/2 tsp Baking Powder
  • 1 cup 2% milk
  • 1 tsp Vanilla Extract
  • 1 large egg
  • 2 tbsp Vegetable Oil

Instructions

  1. Blend CAULIPOWER Cauliflower-Based Baking Mix, sugar and baking powder in a medium bowl.
  2. In a separate bowl, combine milk, egg, vanilla extract and vegetable oil. Add this liquid mixture all at once to the dry mixture until the dry ingredients are moistened (small lumps may remain). Do not allow to sit and thicken.
  3. Heat lightly-greased griddle or skillet on medium-high heat until a drop of water sizzles on its surface.
  4. Pour 1/4 cup batter for each pancake to hot surface.
  5. Cook 1-2 minutes or until bubbles appear on top and edge looks cooked.
  6. Whip out your master chef skills and flip your pancake to the opposite side.
  7. Cook until bottom is golden brown.
