Ingredients

  • 8 Ounces Living Now Gluten-Free Pasta any shape that you like!
  • 1 Cup Pumpkin Puree
  • 1/2 Cup Vegetable Broth
  • 1/3 Cup Raw Cashews soaked for 1-2 hours
  • 3 Tablespoons Nutritional Yeast
  • 1 Teaspoon garlic minced
  • 1/2 Tablespoon lemon juice
  • 1/2 Teaspoon Dijon mustard
  • 1/2 Teaspoon Smoked Paprika
  • 1/2 Teaspoon Liquid Smoke
  • 1/2 Teaspoon Sea Salt
  • 1/4 Teaspoon Turmeric

Instructions

  1. Cook pasta according to package.
  2. Place the pumpkin, cashews, veggie broth, nutritional yeast, garlic, lemon juice, mustard, paprika, liquid smoke, sea salt, and turmeric in a blender or food processor and puree until completely smooth.
  3. Once the pasta is done cooking, drain and rinse with cold water.
  4. Pour the cheese sauce into the pot with the pasta and stir to coat.
