Ingredients
- 2 1/4 cups Vegetable Broth
- 1/2 cup Quinoa uncooked
- 15 oz can Black Beans
- 1/2 28 oz container Tomatoes diced
- 1/4 cup Red Bell Pepper chopped
- 1/4 cup green bell pepper chopped
- 1 carrot shredded
- 1/2 onion chopped
- 2 cloves garlic
- 1/2 Chili Pepper small
- 2 tsp Chili Powder
- 1/4 tsp Cayenne Pepper
- 1 1/2 tsp Salt
- 1 tsp black pepper ground
- 1 tsp Cumin ground
- 1 tsp Oregano
- 1/2 cup corn kernels
Instructions
- Stir broth, quinoa, and black beans in crockpot.
- Add remainder of ingredients and stir.
- Set slow cooker on high for 2.5-3 hours or low for 5-6 hours.
- Monitor the last 30 minutes - 1 hour for best results.
- Serve topped with sour cream or yogurt, avocado, and cheese.
