Veggie-Packed Chicken Piccata

Ingredients
- 4 All Natural Chicken Tenders
- 1 package Linguine Cauliflower Pasta
- 1 cup cherry tomatoes (halved)
- 1/2 cup mushrooms, sliced
- 2 tbsp Butter
- 3/4 cup heavy cream
- 1 tbsp capers
- 1/2 a lemon, juiced
- Salt and Pepper to taste
- parsley, for garnish
Instructions
- Preheat oven to 425 degrees and bake CAULIPOWER Chicken Tenders for 15-17 minutes or until chicken is cooked through.
- Sauté halved tomatoes and sliced mushrooms in a skillet over medium heat with butter.
- Once vegetables are sautéed, add lemon, heavy cream and capers to skillet and reduce heat to low and simmer.
- While skillet ingredients simmer, bring a large pot of salted water to a rolling boil and add frozen CAULIPOWER Cauliflower Pasta to boiling water. Stir to loosen.
- Cook CAULIPOWER Cauliflower Pasta for 3 minutes, drain, and toss into the skillet to combine ingredients. Plate with Chicken Tenders, garnish with parsley and enjoy!
