Ingredients
- 8 slices Wasa Gluten Free Sesame & Sea Salt
- ¼ cup chopped yellow onion
- 2 tablespoons extra virgin olive oil
- 2 cups green peas
- 1 cup vegetable broth
- salt and pepper, to taste
- 1–2 mint leaves
- 1 cup cherry tomatoes
- 1 cup feta
Instructions
- Saute ¼ cup chopped yellow onion with 2 tablespoons extra virgin olive oil gently over medium heat for 4 minutes.
- Add 2 cups peas and 1 cup vegetable broth, season with salt and pepper and bring to boil, cook 2 minutes.
- Separate liquid from peas and cool down as quick as possible – set liquid aside in case needed for below step.
- Process peas in blender with mint leaves until smooth – adjusting density with the right amount of liquid.
- Spread pea mixture on cracker.
- Slice cherry tomatoes in half and place on top of pea mixture.
- Sprinkle feta on top of tomatoes.
