Sesame Garden Spread

Ingredients

  • 8 slices Wasa Gluten Free Sesame & Sea Salt
  • ¼ cup chopped yellow onion
  • 2 tablespoons extra virgin olive oil
  • 2 cups green peas
  • 1 cup vegetable broth
  • salt and pepper, to taste
  • 12 mint leaves
  • 1 cup cherry tomatoes
  • 1 cup feta

Instructions

  1. Saute ¼ cup chopped yellow onion with 2 tablespoons extra virgin olive oil gently over medium heat for 4 minutes.
  2. Add 2 cups peas and 1 cup vegetable broth, season with salt and pepper and bring to boil, cook 2 minutes.
  3. Separate liquid from peas and cool down as quick as possible – set liquid aside in case needed for below step.
  4. Process peas in blender with mint leaves until smooth – adjusting density with the right amount of liquid.
  5. Spread pea mixture on cracker.
  6. Slice cherry tomatoes in half and place on top of pea mixture.
  7. Sprinkle feta on top of tomatoes.
