This recipe is great hot or cold, making it the perfect make-ahead meal for a special occasion brunch like Mother’s Day!

Ingredients
10 ounces frozen, chopped spinach (or bag of fresh spinach, chopped)
1 pound (16 ounces) ricotta cheese
1 egg
1 teaspoon salt
1/2 teaspoon nutmeg
1 cup grated Swiss cheese
1 cup grated parmesan cheese
4 teaspoons of butter or margarine
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Grease an 8-inch or 9-inch pan.
- If using fresh spinach, wash, dry, and chip spinach. If using frozen spinach, drain well. Set aside.
- In a large bowl mix together the egg and ricotta cheese
- Add salt and nutmeg, stir until blended.
- Add spinach and cheese to egg mixture. Stir until well mixed.
- Pour mixture over a greased quiche or pie pan.
- Dot top with the 4 teaspoons of butter to give quiche a beautiful golden-brown top.
- Bake at 350 degrees Fahrenheit for 45 minutes.
Notes
This spinach-cheese mixture can be baked in individual muffin tins for a great cold brunch entrée.
